One variety of sweet potato is pale-skinned with yellow flesh. What we call the "yam," has dark skin and orange flesh, and is really another variety of sweet potato. True yams are not related to sweet potatoes and are rarely grown in the US. Canned "yams" cn be either variety and, in different regions, the fresh vegetable can be called by either name.
