Mexican cinnamon, "Canela" can be found in ethnic or gourmet sections of grocery stores and smells like Red Hot candies. If unavailable, regular cinnamon can be substituted.

Executive General Manager	Scott Patten (R)	Pictured here with his wife, Laurie, Scott Patten was born in Chattanooga, TN. He attended the University of Georgia, and UT. He has worked with Canyon Cafe and Sam's Cafe for over 6 years.
Chef	Guermo Gumecindo	Born in Oaxaca, Mexico, bilingual Chef Guerrero has worked with Sam's Cafe for seven years. His passion for culinary arts is matched only with his passion for spending time with his wife and two sons.
Manager	Kaj Marcussen	Kaj was born and raised in Cedar Falls, Iowa, and attended the University of Northern Iowa. This proud owner of two cats loves architecture and graphic and web design. He has enjoyed 9 years of employment with Sam’s Café.
Manager	Amber Cesena
Sous Chef	Jose Gonzales-Corro (L)	Jose Gonzales, born in Veracruz, Mexico, received his education at Universidad Veracruzana. Jose is bilingual, and has worked with Sam's Cafe for six years, and enjoys cooking and spending time with his family.
