PRICKLE PEAR

A flat leafed cacti that produces beautiful flowers and very sweet fruit that isusually used to flavor drinks, vinagrette, jellies and candies. The fresh fruits are available seasonally and are best prepared by peeling off the skin and thorns, chopping or pureeing the flesh and then straining to remove the seeds. Bottled juice/syrup can be found year-round at specialty stores. The young pads are known as Nopalitos and taste somewhat like green beans.
