chorizo is a sausage typically made of pork, chile, paprika and salt.
Many brands are available, raw or smoked, made with pork, beef, or
turkey. If using uncooked, cook and drain off the oil before using
in egg dishes. Chorizos can vary in heat from mild to wild. They can
be found in natural casings or in plastic sleeves.
